Ingredients
  • ½ cup salted butter softened
  • 1 cup white sugar
  • 1 ½ cups all purpose flour
  • 1 tablespoon baking powder
  • 4 egg whites
  • ½ cup whole milk
  • 1 tablespoon vanilla extract
Instructions
  1. Preheat the oven to 350 degrees and grease a square 8x8-inch pan or one 9-inch round pan.
  2. In a bowl, cream together the butter and sugar.
  3. In a separate large bowl, combine flour and baking powder and mix well.
  4. In a third separate bowl, add the egg whites and whip until light and fluffy- about 2 minutes.
  5. Add the butter/sugar mixture to the flour and baking powder mixture. Mix well.
  6. Stir in the milk and vanilla extract until combined.
  7. Gently fold in the egg whites until just combined.
  8. Pour mixture into the greased 8x8 pan and bake for 30 minutes at 350 or until a toothpick comes out clean when inserted in the center of the cake.
